Editing a canned job from the appointment screen

If your in the appointment screen you can add a canned job at the bottom. Is there a way to open that canned job and edit it?

Not in the Appointment window, no. The point there was simply to get it selected.

It can of course be edited once on the order or if it's an institutional change, that should be done in the Utilities - Canned Job section for the change to be reflected in all future usage.
